Frollo’s job was changed 

Based on the article in Mental Floss, in the original novel by Victor Hugo, Frollo was Notre Dame’s Archdeacon. Disney was worried that having an evil priest as a character would be criticized by Catholics, and so Frollo’s job was changed and he was made a judge.

Quasimodo’s voice

Mandy Patinkin was offered by Dnsney to be the voice of Quasimodo after he played sword maestro Inigo Montoya in The Princess Bride. He immediately said yes and he wanted to emulate Charles Laughton’s portrayal in the 1939 film. However, Disney wanted a friendlier voice for the bell-ringer. Eventually, Academy Award nominee Tom Hulce voiced Quasimodo.

The three gargoyles are Quasimodo’s wise-cracking statues named Victor, Hugo, and Laverne. Disney took inspiration from the novel as the main character would often talks to the cathedral’s gargoyles.
